“Sláinte Stack” – Corned Beef Burger with Oscar Wilde Cheddar

Ingredients

  • 1 (4-pack) Oliver’s Own Corned Beef Burger
  • Vegetable Oil
  • 6-8 oz. Oscar Wilde Cheddar
  • 1 ½ cups thinly sliced white cabbage
  • 1 ½ cups thinly sliced purple cabbage
  • 2 medium-sized carrots, grated
  • 1 apple, grated
  • 2 tablespoons chopped flat leaf parsley
  • 2 tablespoons olive oil
  • 1 ½ tablespoon apple cider vinegar
  • 1 ½ tablespoon whole grain mustard
  • 1 tablespoon honey
  • ½ teaspoon black pepper
  • Kosher salt, to taste
  • Spicy Mustard
  • Butter Lettuce
  • 4 hamburger buns

Instructions

  1. Remove burgers from the package and press down on them with the palm of your hand until they flatten and spread out in size by a third, or slightly larger than your burger bun. This will account for any shrinkage during cooking. Let rest at room temperature for 10 minutes.

  2. When ready to make the burgers, heat a large cast iron skillet or griddle on medium-high heat until hot, then add enough vegetable oil to coat the skillet or griddle. When oil is very hot but not yet smoking, add burger patties and sear on one side for 5 to 7 minutes, or until golden and crisp on the bottom. Flip and top with cheese.

  3. While the burgers are cooking, make the cabbage-apple slaw. In a small bowl combine the oil, cider vinegar, whole grain mustard, honey, black pepper, and kosher salt. Whisk well to combine. In a large bowl, mix together the cabbage, carrots, apple, and parsley. Pour the vinaigrette over the veggies and toss until evenly coated.

  4. Sear an additional 5 to 7 minutes, or until cheese is melted and burgers are cooked as desired; transfer to a warm plate to rest for 5 minutes.

  5. To assemble burgers, toast buns and add a generous spread of spicy mustard to each cut side of the buns.

  6. On the bottom bun place some butter lettuce then the cheese-topped burger. Finally, top with cabbage-apple slaw, then the top bun.

  7. Enjoy with a cold can of Old Caz One Way American IPA – optional but recommended!
