Curried Chicken Salad

This classic salad make a terrific healthy lunch! Enjoy it rolled into a wrap, mounded on a sandwich, or even just pile it on a plate as an easy lunch everyone will enjoy.

Ingredients

  • 3 Chicken Breasts, cooked/cooled & shredded
  • 1/4 c. Mayonnaise
  • 2 tsp. Curry Powder
  • 1/2 c. Roasted Cashews, roughly chopped
  • 1/4 c. Celery, finely chopped
  • 1/4 c. Raisins
  • 1 c. Shredded Carrots
  • 1/2 small Red Onion, finely diced
  • Salt & Black Pepper, to taste
  • Bread & Lettuce (for serving)

Instructions

  1. Combine all ingredients in a large bowl, and season to taste with salt and pepper. Great for a quick lunch!
