Meat Butcher

Knowledge, Skills and Abilities:

  • Advance product  knowledge
  • Safe food handling and storage
  • Safe use of sharp knives and meat saws
  • Able to relate cooking ideas for product to customers
  • Completion of a full butcher apprenticeship
  • Excellent communication skills

Responsibilities and qualifications:

  • Break product (beef, pork, lamb and poultry)
  • Butcher meat, poultry and fish
  • Perform all duties of a meat customer service clerk
  • Order product when requested
  • Inventory product
  • Provide excellent and quality service to customers
  • Package, weigh, label and price product
  • Properly rotate product in case
  • Maintain overall appearance and replenish items in case as needed
  • Follow established weights and measures procedures (tares)
  • Maintain both full and self-service counters
  • Proper use of equipment
  • Maintain and clean equipment and work areas to maintain health and sanitation standards


  • Must be at least 18 years of age
  • Able to follow instructions and procedures
  • Must have basic knowledge of living conditions of animals and has the ability to educate the public on these issues
  • Demonstrated ability in knife handling, other cutting equipment and safety procedures
  • Adhere to all Oliver’s and Meat Department policies
  • Follow and enforce all applicable State of California Health and Safety codes
  • Able to fulfill all physical requirements of the position (complete list upon request)
  • Stand, walk, reach and repetitive use of both hands
  • Ability to bend and twist at waist and neck
  • Occasionally lift/carry up to or over 85 pounds
