White Bean Salad Featuring Oliver’s Own Picual Finishing Olive Oil

Ingredients

  • 1 can (15 oz) White beans, rinsed and drained
  • 1 C. Cherry tomatoes, halved
  • 1 small Shallot, sliced thin
  • 1 small Clove garlic, minced or grated
  • Zest and juice of ½ a lemon
  • A handful of fresh parsley, chopped
  • Salt & freshly ground black pepper
  • 2–3 Tbsp. Oliver's Own Picual Finishing Olive Oil
  • Oliver's Own shaved Parmesan

Instructions

  1. Prep the tomatoes: Halve the cherry tomatoes and lightly salt them. Let them sit for 5–10 minutes to draw out some juices.

  2. In a bowl, combine the white beans, cherry tomatoes, shallot, and garlic.

  3. Add the lemon zest and juice, and season with salt and pepper.

  4. Add the fresh herbs and toss gently.

  5. Right before serving, drizzle generously with the green finishing olive oil to coat everything — you want that peppery hit to come through.

  6. Top with shaved cheese and enjoy.
