Nectarine Salsa

Summer stone fruit is here! Fresh at Oliver’s this week are Nick Bolt Organic White and Yellow Peaches and Nectarines. We love this sweet and spicy Nectarine Salsa! Homemade salsa is simple and delicious and this yummy version takes advantage of seasonal nectarines. Scoop it up with your favourite corn chips, spoon over grilled fish or chicken, or dollop on your favourite tacos.

  • Prep Time: 10 minutes
  • Cook Time: 10 minutes

Ingredients

  • 2 nectarines, pitted and chopped
  • 1/4 medium red onion, finely chopped
  • 1/4 cup Oliver's Own Vecchio balsamic vinegar
  • 1 teaspoon white sugar
  • 1/2 teaspoon fresh minced cilantro
  • 1/2 teaspoon sea salt
  • freshly ground black pepper

Instructions

  1. In a bowl, mix the nectarines, onion, vinegar, sugar, cilantro, salt, and pepper. Allow to sit for 5 minutes.

  2. Optional, for a softer salsa, cook in a skillet over medium heat and stir the nectarine mixture for 10 minutes, until onion and nectarines are tender and lightly browned.
