Lemon-Herb Lamb Shoulder Chops
Ingredients
- 4-6 Bone-in lamb shoulder chops (2-3 lbs)
- 1/3 C. Oliver's Own lemon-infused olive oil
- 4 Garlic cloves, minced
- Zest + juice of 1-2 lemons
- 2 Tbsp. Fresh rosemary, chopped
- 1 Tbsp. Fresh thyme
- 1 tsp. Oregano
- 1 tsp. Salt
- 1/2 tsp. Black pepper
Instructions
Whisk together the lemon-infused olive oil, garlic, lemon zest and juice, herbs, salt, and pepper.
Marinate the chops in the mixture for 1–4 hours in the refrigerator.
Grill over medium-high heat for 4–6 minutes per side until they reach 135–145°F.
Rest 5–10 minutes before serving with lemon wedges.
