Lemon-Herb Lamb Shoulder Chops

Ingredients

  • 4-6 Bone-in lamb shoulder chops (2-3 lbs)
  • 1/3 C. Oliver's Own lemon-infused olive oil
  • 4 Garlic cloves, minced
  • Zest + juice of 1-2 lemons
  • 2 Tbsp. Fresh rosemary, chopped
  • 1 Tbsp. Fresh thyme
  • 1 tsp. Oregano
  • 1 tsp. Salt
  • 1/2 tsp. Black pepper

Instructions

  1. Whisk together the lemon-infused olive oil, garlic, lemon zest and juice, herbs, salt, and pepper.

  2. Marinate the chops in the mixture for 1–4 hours in the refrigerator.

  3. Grill over medium-high heat for 4–6 minutes per side until they reach 135–145°F.

  4. Rest 5–10 minutes before serving with lemon wedges.
