Buttery Buffalo Wings

Ingredients

  • 2 lb. Chicken Party Wings
  • 2 tsp. Baking powder
  • 2 tsp. Kosher salt
  • ¼ C. Unsalted butter, melted
  • ¼ C. Frank's Red Hot Sauce
  • Blue cheese dip, for serving
  • Celery sticks, for serving

Instructions

  1. Preheat the oven to 250°F. Put one oven shelf in the lower quarter of the oven and one in the top quarter.

  2. Line a tray with foil and put a rack on the tray then spray the rack with oil.

  3. Pat the wings dry then place in a large bowl. Sprinkle over baking powder and salt. Use hands to toss well to coat wings evenly.

  4. Place the wings skin side up on the rack. Bake on the lower shelf in the oven for 30 minutes.

  5. Move the tray up to the higher shelf and turn the oven up to 425°F. Bake for a further 40 to 50 minutes, rotating the tray halfway through. The wings do not need to be turned over. They are ready when dark golden brown and the skin is very crispy.

  6. Meanwhile, in a large bowl, whisk together the melted butter and hot sauce.

  7. Transfer the wings into a large bowl. Pour over sauce and toss to coat. Serve immediately with Blue Cheese Dip and celery Sticks
