Blueberry Popsicles

Ingredients

  • 2 ½ C. Fresh blueberries
  • 1 ½ C. Full fat vanilla Greek yogurt
  • ¹⁄₃ C. Heavy cream
  • 2 Tbsp. Pure maple syrup
  • 1 tsp. Fresh lemon juice

Instructions

  1. Add blueberries, yogurt, cream, maple syrup, and lemon juice to a high-powered blender.

  2. Blend on high for 30 – 60 seconds until very smooth and creamy. Taste and adjust sweetness if needed.

  3. Slowly pour the blueberry mixture into popsicle molds. Use a spatula to scrape down the blender and get all of the mixture.

  4. Insert popsicle sticks into each mold and freeze for at least 6 hours, or overnight.
