Blueberry Muffins

This classic recipe is always a perfect way to enjoy this fruit; bursting with fresh berries with a tender crumb and sugar crust, these really are the best blueberry muffins!

Ingredients

  • 1 1/2 cups flour
  • 3/4 cup white sugar
  • 1/2 teaspoon salt
  • 2 teaspoons baking powder
  • 1/3 cup vegetable oil
  • 1 egg
  • 1/3 cup milk
  • 1 cup fresh organic blueberries
  • Crumb Topping:
  • 1/2 cup white sugar
  • 1/3 cup flour
  • 1/4 cup butter, cubed
  • 1 1/2 teaspoon ground cinnamon

Instructions

  1. Preheat oven to 400*F. Grease muffin cups or line with muffin liners.

  2. Combine 1 1/2 cups flour, 3/4 cup sugar, salt and baking powder in a bowl. In a 1-cup measuring cup, place vegetable oil, the egg and enough milk to fill the cup. Mix this with the flour mixture. Fold this with the flour mixture. Fold in the blueberries, being careful to not over-mix. Fill muffin cups right to the top, and sprinkle with the crumb topping mixture. Bake for 30-35 minutes, or until a fork inserted in a muffin comes out clean.

  3. To Make Crumb Topping: Mix together in a bowl with a fork 1/2 cup sugar, 1/3 cup flour, 1/4 cup butter and 1 1/2 teaspoons cinnamon. Sprinkle over the muffins before baking.
