Herby Skillet Seabass Featuring Oliver’s Own Basil Infused Olive Oil
Bring bold, fresh flavor to the table with this Herby Skillet Seabass featuring buttery Corvina Seabass simmered with garlic, sweet cherry tomatoes, and rich Oliver’s Own Basil Infused Olive Oil. Light, vibrant, and packed with savory herb flavor, it’s an easy yet elegant meal perfect for weeknight dinners or warm summer evenings.
Ingredients
- 2 Corvina Seabass fillets, about 1 inch thick
- Salt & freshly ground black pepper
- 1 C. Cherry tomatoes, halved
- 2 Cloves garlic, thinly sliced
- 1 Tbsp. Neutral oil
- 2–3 Tbsp. Oliver's Own basil finishing olive oil
- Fresh basil leaves for garnish
Instructions
Pat the seabass fillets dry and season both sides with salt and pepper.
Heat the neutral oil in a large skillet over medium heat. When hot, add the seabass fillets and sear for about 4–5 minutes per side, depending on thickness. You want a golden crust and opaque center. If needed, reduce heat to medium-low to avoid overcooking.
In the last 2 minutes of cooking, add the garlic slices and cherry tomatoes to the skillet. Let them soften and caramelize slightly.
Remove from heat. Drizzle generously with the basil finishing olive oil while the seabass is still hot to bring out the herbaceous flavor.
Garnish with fresh basil leaves.
