Herby Skillet Salmon Featuring Oliver’s Own Basil Infused Olive Oil

Ingredients

  • 2 Coho salmon steaks, about 1 inch thick
  • Salt & freshly ground black pepper
  • 1 C. Cherry tomatoes, halved
  • 2 Cloves garlic, thinly sliced
  • 1 Tbsp. Neutral oil
  • 2–3 Tbsp. Oliver's Own basil finishing olive oil
  • Fresh basil leaves for garnish

Instructions

  1. Pat the salmon steaks dry and season both sides with salt and pepper.

  2. Heat the neutral oil in a large skillet over medium heat. When hot, add the salmon steaks and sear for about 4–5 minutes per side, depending on thickness. You want a golden crust and opaque center. If needed, reduce heat to medium-low to avoid overcooking.

  3. In the last 2 minutes of cooking, add the garlic slices and cherry tomatoes to the skillet. Let them soften and caramelize slightly.

  4. Remove from heat. Drizzle generously with the basil finishing olive oil while the salmon is still hot to bring out the herbaceous flavor.

  5. Garnish with fresh basil leaves.
