Bacon Ranch Potato Salad


  • 3 lb. Small red Potatoes
  • 12 oz. Bacon, Cooked
  • 3/4 Cup mayonnaise
  • 1 Cup sour cream
  • 1/2 Cup chopped chives
  • 1 Packet dry ranch dressing mix
  • Salt and pepper to taste


  1. Boil Potatoes until fork tender and easily cut with a knife (don’t overcook or they will be mushy).

  2. Rinse in cold water and dry, then refrigerate for 30 min. or more to completely cool.

  3. In a small bowl, mix mayonnaise, sour cream, chives and ranch seasoning.

  4. When potatoes are chilled, slice and mix with ranch mixture and bacon, add salt and pepper to taste.

  5. Refrigerate to allow the potatoes to soak up the dressing and let the flavors build.
