Week Night One-Pot Pasta

It seems like everyone these days has somewhere to be, someone to talk, or something to do – with this kind of chaos, the tradition of the sit-down dinner has unfortunately had to take a bit of a backseat. However, it doesn’t have to!   • Serves: 4-6 people
  • Prep Time: 15 minutes
  • Cook Time: 30 minutes

Ingredients

  • 1 package Imagine© Low-Sodium, Organic Chicken Broth
  • 1 package dried Rotini Pasta
  • 1 package frozen Meatballs
  • 1 32 oz. can Diced Tomatoes
  • 1 bunch Basil, chopped
  • 1 teaspoon Dried Oregano
  • 2 Bay Leaves
  • 1/2 teaspoon Chili Flake
  • 6 cloves Garlic, chopped
  • 1 Onion, chopped
  • 1 cup White Wine
  • 1 tablespoon Olive Oil
  • 1 tablespoon Butter
  • Salt & Pepper, to taste

Instructions

  1. Combine all ingredients except butter and olive oil in large pot, and stir to combine; make sure that all ingredients are submerged in liquid, especially meatballs.

  2. Heat on high until boiling, then reduce heat to simmer and cook for 20 minutes or until sauce is thickened and meatballs are heated through.

  3. When sauce is thickened and pasta and meatballs are cooked, add butter and olive oil, stirring to combine. Season with salt and pepper.
