Triple-Berry Smoothie Bowl with Homemade Granola & Flax

Loaded with antioxidants and fiber, this smoothie bowl combines tart berries and superfood flax seeds for a super healthy breakfast or lunch. Top it with a handful of easy granola and your favorite fresh or dried fruit to complete the picture!

Ingredients

  • 5 Frozen Strawberries
  • 1/2 c. Frozen Raspberries
  • 1/4 c. Frozen Blackberries
  • 8 oz. Apple Juice
  • 8 oz. Cold Water
  • 2 tsp. Ginger Juice
  • 1 tbsp. Flax Seeds
  • Fresh Fruit & Coconut (for serving)
  • Granola - 1 c. Old-Fashioned Rolled Oats
  • 1/2 c. Raw Almonds
  • 1/4 c. Pecans
  • 4-5 large Pitted Dates
  • 1/4 tsp. Cinnamon
  • 1/8 tsp. Salt

Instructions

  1. Preheat oven to 325 degrees, and prep a baking tray with parchment paper. Combine all granola ingredients in a food processor, and process until large clusters begin to form. Transfer tp prepared tray, and break into smaller clusters, spreading granola into a single, even layer. Bake for 15 minutes, then stir granola. Continue baking until granola is golden and crisp, about 15 to 20 minutes more. When finished, remove and cool completely.

  2. Combine frozen berries, apple juice, water, ginger juice, and flax seeds in a blender. Puree on high until completely smooth and blended, then pour into a chilled bowl. Top with homemade granola, your favorite fresh berries, and/or coconut slivers.
