Taleggio Grilled Cheese with Tomato and Fresh Basil

Iconic Italian Teleggio is an ideal candidate for this perfectly melted grilled cheese sandwich. Freshly sliced tomato adds a bright acidic note and fresh Basil brings a floral, herbaceous element to this rich, complex Italian-themed sandwich masterpiece.

Ingredients

  • 2 slices Sourdough Bread (or your own bread of choice)
  • 3-4 oz. thinly sliced Taleggio, rind removed
  • 1-2 slices large heirloom or beefsteak tomato slices
  • 2 large basil leaves
  • 1-2 tablespoons unsalted butter, softened

Instructions

  1. Heat the broiler of your oven, making sure the rack is set about 8 inches below the broiling element.

  2. Place both slices of bread on a baking sheet and place half the Taleggio on each slice of bread.

  3. Place the baking sheet in the oven and broil until cheese is melted and bubbly.

  4. While you’re waiting for the cheese to melt, preheat a non-stick skillet over medium heat.

  5. Once the cheese is melted, remove from the oven. Top one slice with tomato slices and basil leaves, then place the other slice on top, cheese-side-down.

  6. Apply a light layer of butter to the top and bottom surfaces of the sandwich.

  7. Place sandwich in pre-heated skillet and cook for 2 to 3 minutes, or until lightly browned on one side; flip over and cook for 2 to 3 minutes, or until the other side is lightly browned.

  8. Remove from heat. Slice and serve.
