Strawberry Lemonade Popsicles

Ingredients

  • 2 C. Fresh strawberries, hulled and halved
  • 3/4 C. Freshly squeezed lemon juice (about 4–5 lemons)
  • 1/2 C. Water
  • 1/3 to 1/2 cup honey (adjust to taste)
  • Zest of one lemon (for extra zing)
  • Optional: a few extra sliced strawberries or thin lemon slices for garnish inside the molds

Instructions

  1. In a blender, combine strawberries, lemon juice, water, and honey and blend until completely smooth. Taste and adjust sweetness or tartness as desired. Add more honey if needed.

  2. If you want a smoother texture, strain the mixture through a fine mesh sieve to remove seeds and pulp.

  3. Pour the mixture into popsicle molds. Drop in a few thin slices of fresh strawberry or lemon for a pretty visual touch (if using).

  4. Insert sticks and freeze for at least 4–6 hours, or until fully solid.

  5. Run the molds under warm water for a few seconds to loosen them for easy removal.
