Parmesan Asparagus Fries

  • 1 dozen Fresh Asparagus, woody ends removed
  • 1 c. Grated Parmesan
  • 2 c. Panko Bread Crumbs
  • 2 Eggs, beaten w/ 1 tbsp. Water
  • 1 c. Flour
  • 1/2 tsp. Black Pepper
  • 1 tsp. Salt
  • 2 tsp. Italian Seasoning


  1. Preheat oven to 425 degrees, and spread a piece of parchment paper on a baking sheet. In a flat dish, combine panko and parmesan; in a separate dish, combine salt, pepper, Italian seasoning, and flour.

  2. Dredge asparagus first in seasoned flour, then in egg, and finally in the panko-parmesan mixture. If a thicker crust is desired, dredge again in egg followed by panko. Repeat until all asparagus spears are breaded, then arrange in a single layer on the prepared baking sheet. Bake until golden brown and tender, about 10 to 15 minutes. Serve simply with fresh lemon or with garlic aioli for dipping.
