Mixed Olive Tapenade

Oliver’s gourmet cheese department may be known for its absolutely massive selection of gourmet cheeses from around the world, but did you know they also run our gourmet olive bar? Yes indeed, and this week only, we’ve dropped the prices on the entire olive bar – you heard right, “olive” it! This tapenade uses four items off the olive bar and combines them into a spread that’s truly greater than the sum of its parts; briney and intense, it’s perfect spread to spruce up a sandwich, or serve it with Oliver’s Own focaccia for a simple and delicious appetizer.

Ingredients

  • 1 c. Kalamata Olives, pitted
  • 1 c. Green Olives, pitted
  • 1/4 c. Dry Cured Olives
  • 1 tbsp. Fresh Italian Parsley, chopped
  • 1 tbsp. Fresh Thyme, chopped
  • 1 tbsp. Capers, rinsed and drained
  • 2 Peppadew Peppers, roughly chopped
  • 3 Anchovie Fillets
  • 1 clove Garlic, chopped
  • 1/2 c. Olive Oil
  • 1 tbsp. Lemon Zest
  • Salt & Black Pepper, to taste

Instructions

  1. Combine all ingredients in the bowl of a food processor. Process until ingredients are evenly combined and broken down but not pastey, the tapenade should still have some texture to it.

  2. Transfer to a jar with a lid. Tapenade will keep in the fridge for up to two weeks. Serve with toasted bread or add it to sandwiches for a kick of flavor.
