Grilled Margherita Pizza

Who knew that all you needed for restaurant-quality pizza was already sitting in your backyard! Grilled pizzas are the crispiest pie you can get without a real wood-burning oven; you can top these babies with just about anything, but we’ve opted for simple deliciousness with this easy Margherita version. These babies are perfect for a funky summer barbecue or anytime you want great pizza!

Ingredients

  • 1 package Oliver's Own Pizza Dough, at room temperature
  • 1 c. Basil Leaves, packed & chopped
  • 1 large Beefsteak or Heirloom Tomato, cored & washed
  • 16 oz. Fresh Mozzarella, sliced
  • 2 cloves Garlic, crushed
  • 3 tbsp. Olive Oil + more for grill
  • Salt & Black Pepper

Instructions

  1. Clean and prep grill, then preheat on high until needed. Stretch dough to form a circle and transfer to a lightly floured cookie sheet; lightly grease prepared grill with olive oil, then transfer dough rough onto grill. Grill briefly on one side until bottom is just beginning to brown and the top is bubbly. Transfer back to floured cookie sheet, grilled side up, then close grill lid to retain heat.

  2. Mix crushed garlic with 2 tbsp. of olive oil, then brush mixture across prepared pizza round. Top first with mozzarella, then tomato slices, and finish with chopped basil. Drizzle with remaining tablespoon of olive oil and season with salt and pepper, then lightly oil grill again before transferring pizza back. Reduce the heat to low and close the lid. Allow pizza to cook until crust is browned and cheese has melted 2-3 minutes.
