Grilled Corn with Herb Butter and Cotija

Ingredients
- 1/2 C. Unsalted butter, softened
- 2 Tbsp. Chopped fresh herbs (like parsley, cilantro, or chives)
- 1 Garlic clove, minced
- Zest of 1 lime
- 6 Ears corn, husked
- Olive oil (for brushing)
- Salt & pepper
- 1/2 C. Crumbled Cotija cheese
- Lime wedges (for serving)
Instructions
Make the herb butter by mixing softened butter with herbs, garlic, and lime zest, set aside.
Brush corn with oil, season with salt & pepper, and grill over medium-high heat, turning until lightly charred (10–12 mins).
Spread herb butter on hot corn and sprinkle with Cotija cheese.
Serve with lime wedges.
