Grilled Corn with Herb Butter and Cotija

Ingredients

  • 1/2 C. Unsalted butter, softened
  • 2 Tbsp. Chopped fresh herbs (like parsley, cilantro, or chives)
  • 1 Garlic clove, minced
  • Zest of 1 lime
  • 6 Ears corn, husked
  • Olive oil (for brushing)
  • Salt & pepper
  • 1/2 C. Crumbled Cotija cheese
  • Lime wedges (for serving)

Instructions

  1. Make the herb butter by mixing softened butter with herbs, garlic, and lime zest, set aside.

  2. Brush corn with oil, season with salt & pepper, and grill over medium-high heat, turning until lightly charred (10–12 mins).

  3. Spread herb butter on hot corn and sprinkle with Cotija cheese.

  4. Serve with lime wedges.
