Gluten-Free Protein Pancakes

Protein-pancakes are mega-tasty and a great low-carb breakfast option. Lightly sweet and fluffy, stack them up high with everything from fresh fruit to peanut butter for a super healthy start to the day.

  • Prep Time: 10 minutes
  • Cook Time: 15-20 minutes

Ingredients

  • 2 scoops Vanilla or Chocolate Protein Powder
  • 1/2 c. Almond or Coconut Milk
  • 2 large Eggs
  • 1/2 c. Gluten-Free Oats
  • 1 ripe Banana
  • 1 tbsp. Baking Powder
  • Vegetable Oil (for frying)
  • Fruit, Peanut or Almond Butter, & Maple Syrup (for serving)

Instructions

  1. Combine Garden of Life Plant Protein, eggs, oats, banana, almond or coconut milk, and baking powder to the bowl of a blender and puree until smooth.

  2. Heat a griddle until hot, then lightly coat in oil. Ladle batter onto griddle, and allow to cook until bubbles on top begin to burst and hold their shape, then flip.

  3. Serve fresh, with a shmear of almond or peanut butter, plenty of fresh fruit, and a drizzle of maple syrup.
