German Potato Salad

Made with tender red potatoes, smoky bacon, sweet honey, fresh garlic, and a tangy touch of brown mustard, this classic dish is the perfect companion for your summer picnic. Serve it warm or chilled. Either way, it’s sure to steal the show!

Ingredients

  • 2 lbs. Red Potatoes, cut into large cubes
  • 1 lb. Bacon, diced
  • 2 Shallots, finely diced
  • 2 cloves Garlic
  • 1/2 c. Parsley, finely chopped
  • 1/4 c. Olive Oil
  • 1/4 c. Apple Cider Vinegar
  • 2 tbsp. Honey
  • 1 tbsp. Brown Mustard
  • 1 tsp. Black Pepper
  • Salt, to taste

Instructions

  1. Bring a large pot of water to a boil; add potatoes and cook until tender, about 10 minutes.

  2. At the same time, cook bacon until crispy; remove from pan, leaving 1/4 of grease behind. Cook shallots and garlic in bacon grease until shallots are translucent and garlic is fragrant. Whisk in olive oil, apple cider vinegar, honey, mustard, and black pepper; cook until warmed through and emulsified.

  3. Drain potatoes and place in a large bowl. Toss with bacon and parsley, then coat with dressing. Season with salt as needed, and serve warm or at room temperature.
