- 2 c. Coconut Milk
- 2 tbsp. Garden of Life Unflavored Collagen Peptides
- 2 tbsp. Honey
- 1 tsp. Vanilla Extract
- 1 lb. Fresh Cherries or Strawberries, pitted/hulled & sliced
- 1/4 c. Grand Marnier
- 1 tbsp. Sugar
In a blender or food processor, puree coconut milk, Garden of Life Unflavored Collagen Peptides, honey, and vanilla until smooth. Allow collagen to bloom briefly by leaving puree to bubble for about 5-10 minutes. Pour mixture into a saucepan and heat on medium, whisking constantly until collagen has fully dissolved. Fill individual ramekins or cups about halfway with pannacotta mixture and allow to chill until set, about 3 hours.
While the pannacottas set, combine fresh cherries or strawberries, Grand Marnier, and sugar in a large bowl. Cover and refrigerate; allow fruit to macerate for 2 hours.
To serve, top pannacotta with macerated fruit immediately before consuming.
