Grilled Pound Cake

This week, we’re throwing it all on the grill, and there’s nothing that grills up quite so nice as a piece of sumptuous pound cake. Dished up with fresh berries and ice cream, this cake is crispy on the outside and decadently soft on the inside; try it as a creative end to a barbecue or dish it up as an easy weeknight dessert!

  • Cook Time: 5 minutes

Ingredients

  • 1 Oliver's Own Vanilla Pound Cake, sliced into 1 inch-thick pieces
  • 6 tbsp. Unsalted Butter, melted
  • 2 c. fresh, seasonal Berries
  • 1 tbsp. Light Brown Sugar
  • 1 tbsp. Lemon Juice
  • Ice Cream, for serving

Instructions

  1. In a medium saucepan over medium-low heat, combine the berries, lemon juice, and sugar. Cook until the berries have softened and have begun to release their juice, about 10 minutes.

  2. Preheat grill or grill pan on medium-low heat. Brush the pound cake slices with melted butter, then grill until the cake is toasted, about 2 minutes per side.

  3. Serve pound cake topped with berry mixture and ice cream, if desired.
