Coconut and Black Rice Pudding

  • Serves: 4 servings
  • Prep Time: 5 minutes
  • Cook Time: 45 minutes

Ingredients

  • 1 cup Lotus Foods Forbidden Black Rice
  • 1 cup canned coconut milk, reserve some of the coconut cream from the top of the can for serving
  • 1 cup water
  • 2 tablespoons coconut sugar
  • 1/2 teaspoon salt

Instructions

  1. In a small saucepan add the black rice, coconut milk and water. Heat over high heat until boiling then reduce the heat to low and allow to simmer for up to 30 to 45 minutes (or until the rice is tender). Stir occasionally to prevent the rice from sticking to the bottom of the pan.

  2. In the last 5 minutes of cooking add the sugar and salt. Stir through.

  3. Add a few extra splashes of water if the rice is not tender enough and allow an extra few minutes.

  4. Serve your rice pudding with a small drizzle of coconut cream.

    Thank you for your comment, nutritional information for the black rice will be on the back of the package, as well as for the coconut milk. Unfortunately, at this time there is no way for us to provide nutritional information for recipes, best of luck with that!
