California Roll Stuffed Avocados

At Oliver’s, our roots are in fresh produce, and sometimes we like to turn the spotlight the produce that makes us who we are. These stuffed avocados take full advantage of the silky texture and subtle flavor of these Hass avocados. Tender lump crab meat, cucumber, and carrot combine for all the flavors of your favorite sushi with half the effort, they’re great for a quick lunch or even a hearty appetizer.

  • Serves: 4 servings
  • Prep Time: 10 minutes


  • 2 Ripe Avocados, halved and pits removed
  • 1 c. Lump Crab Meat, drained/rinsed
  • 1/2 c. Cucumber, finely diced
  • 1/4 c. Shredded Carrots
  • 1/2 tsp. Wasabi Paste
  • 1 tsp. Soy Sauce
  • 3 tbsp. Mayonnaise


  1. In a small bowl, combine lump crab meat, cucumber, and carrots; in a separate bowl, whisk together mayonnaise, wasabi, and soy sauce. Pour dressing into crab mixture and combine well.

  2. Scoop about 1 tablespoon of avocado flesh from fruit to enlarge hole where pit was. Fill avocados with heaping scoops of crab salad. Serve immediately.
