- 2 Ripe Avocados, halved and pits removed
- 1 c. Lump Crab Meat, drained/rinsed
- 1/2 c. Cucumber, finely diced
- 1/4 c. Shredded Carrots
- 1/2 tsp. Wasabi Paste
- 1 tsp. Soy Sauce
- 3 tbsp. Mayonnaise
In a small bowl, combine lump crab meat, cucumber, and carrots; in a separate bowl, whisk together mayonnaise, wasabi, and soy sauce. Pour dressing into crab mixture and combine well.
Scoop about 1 tablespoon of avocado flesh from fruit to enlarge hole where pit was. Fill avocados with heaping scoops of crab salad. Serve immediately.
