If you haven’t, start with this recipe. The Brussel sprouts are perfectly tender, but not mushy, and when accompanied by bacon you can’t go wrong!

- 4 strips Sonoma County Meat Co. Bacon
- 2 tablespoons Clover butter
- 1 pound Brussel sprouts, halved
- 1/2 large onion, chopped
- Kosher salt
- Freshly ground black pepper
Cook bacon in a large skillet over medium-high heat until crispy. Remove to a paper towl-lined plate, then roughly chop. In same pan with bacon fat, melt butter over high heat. Add onions and Brussel sprouts and cook, stirring occasionally, unitl sprouts are golden brown, 8 to 10 minutes. Season with salt and pepper, to tast, and toss bacon back into pan. Serve immediately.
