Beef & Ramen Stir Fry

Ingredients

  • 1 Tbsp. Vegetable oil
  • 1 Large onion, chopped
  • 1 Red bell pepper, chopped
  • ½ Head broccoli, cut into florets
  • 1 Large carrot, cut into half moons
  • 1 lb. Ground beef
  • ¼ C. Soy sauce
  • 1 Tbsp. Brown sugar
  • 1 Tbsp. Apple cider vinegar
  • 2 tsp. Sriracha
  • 1 Clove garlic, minced
  • 2 packets Ramen noodles, seasoning packets discarded
  • Sliced green onions, for garnish

Instructions

  1. Heat Oil in a large wok or skillet over medium heat.

  2. Add onions, peppers, and broccoli and cook until tender, 10 minutes.

  3. Add ground beef and cook until no longer pink, 5 minutes more. Drain fat and set aside.

  4. In a separate bowl, whisk together soy sauce, brown sugar, apple cider vinegar, Sriracha, and garlic.

  5. In a medium saucepan, bring water to a boil. Add cooked ramen noodles and cook until tender, 2 minutes.

  6. Drain then add to wok with ground beef and pour sauce over. Toss until completely combined, then garnish with green onions and serve.
