Baked Tomatoes with Toma, Bay Blue, and Bacon

Ingredients

  • 2-3 Tomatoes, sliced into rounds about ¹⁄₈" thick
  • ½ C. Shredded Point Reyes Toma (about 2 oz)
  • ¼ C. Crumbled Point Reyes Bay Blue
  • 1-2 Slices bacon, cooked crisp and crumbled
  • 2 Tbsp. Chopped fresh basil

Instructions

  1. Preheat oven to 400°F. Line a baking sheet with parchment paper.

  2. Place tomato slices on prepared baking sheet. Top tomato slices with equal amounts of shredded Toma.

  3. Bake for 8-10 minutes or until cheese is melted and bubbly. Remove from oven. Immediately top with equal amounts of crumbled Bay Blue, bacon & basil. Serve immediately.
