Bacon & Apple Stuffed Pork Chops

Ingredients

  • 2 Pork chops
  • 4 Slices of bacon, cooked and crumbled
  • 1 Apple, peeled and diced
  • ¼ C. Onion, diced
  • ¼ C. Breadcrumbs
  • Salt and pepper to taste
  • 1 Tbsp. Olive oil

Instructions

  1. In a skillet, sauté the onion and apple until softened (about 5 minutes) and let cool.

  2. Mix the sautéed apple and onion with the crumbled bacon and breadcrumbs in a bowl.

  3. Slice a pocket into the pork chops and stuff with the apple-bacon mixture then season the pork chops with salt and pepper.

  4. Heat olive oil in a skillet over medium-high heat.

  5. Sear the pork chops for 2-3 minutes on each side until browned.

  6. Transfer the skillet to the oven and bake for 20-25 minutes, until the pork chops are cooked through.
