Bacon & Apple Stuffed Pork Chops

Ingredients
- 2 Pork chops
- 4 Slices of bacon, cooked and crumbled
- 1 Apple, peeled and diced
- ¼ C. Onion, diced
- ¼ C. Breadcrumbs
- Salt and pepper to taste
- 1 Tbsp. Olive oil
Instructions
In a skillet, sauté the onion and apple until softened (about 5 minutes) and let cool.
Mix the sautéed apple and onion with the crumbled bacon and breadcrumbs in a bowl.
Slice a pocket into the pork chops and stuff with the apple-bacon mixture then season the pork chops with salt and pepper.
Heat olive oil in a skillet over medium-high heat.
Sear the pork chops for 2-3 minutes on each side until browned.
Transfer the skillet to the oven and bake for 20-25 minutes, until the pork chops are cooked through.
