Watermelon & Jicama Salad

Watermelon and jicama combine to form a salad that is superbly light and incredibly refreshing. Bring it to a summer barbecue as a side dish or mix up a big batch and snack away!

Ingredients

  • 4 c. Seedless Watermelon, cut into chunks
  • 2 c. Jicama, peeled & cut into small chunks
  • 1/2 c. Lime Juice
  • 2 tbsp. Honey
  • 1 tsp. Lime Zest
  • 1/3 c. Mint Leaves, roughly chopped
  • 1 tsp. Salt
  • 1 tsp. Chili Powder
  • 1/2 tsp. Black Pepper

Instructions

  1. In a small bowl, combine lime juice, honey, lime zest, mint leaves, salt, chili powder, and black pepper.

  2. Combine watermelon and jicama chunks in a large salad bowl, then top with dressing. Toss to combine, serve immediately.
