Vegetarian Tater Tot Hotdish

It’s time for the 4th of July, and we’re getting in the spirit with fantastic deals on things grilling! A Tater Tot Hotdish is true Midwestern original and an essential at any gathering – we’ve just put our own California spin on it. Loaded with veggies and topped with crispy tater tots, this vegetarian hotdish is a surefire crowd-pleaser and a definite hit with the kids!

Ingredients

  • 2 c. Fresh Corn Kernels (about 6-8 ears-worth)
  • 1 c. Fresh Cauliflower Florets
  • 1 c. Fresh Broccoli Florets
  • 1 c. Frozen Green Beans, thawed/drained
  • 1 Red Bell Pepper, finely diced
  • 2 stalks Celery, finely diced
  • 1 Large Carrot, finely diced
  • 1/2 Yellow Onion, diced
  • 3 Garlic Cloves, minced
  • 2 cans Cream of Mushroom Soup (if condensed, mix w/ 1 c. Milk)
  • 3 c. Frozen Tater Tots
  • 1 1/2 c. Shredded Cheddar Cheese
  • 1 tbsp. Unsalted Butter
  • Salt & Black Pepper

Instructions

  1. Preheat the oven to 350 degrees, and lightly grease a 9x13 inch casserole dish. Heat a large skillet on medium heat until hot, then add butter. When melted, add onions, celery, carrot, and red bell pepper; cook until veggies have softened slightly, then stir in garlic. When garlic is fragrant, add corn, green beans, cauliflower, and broccoli. Cook until veggies have just begun to soften. Remove from heat and mix with cream of mushroom soup and 1 cup cheddar cheese.

  2. Spread filling in an even layer in the bottom of prepared casserole dish. Top with a single layer of frozen tater tots, then sprinkle with remaining cheese. Bake hotdish uncovered for 50 minutes to 1 hour or until filling is bubbling and tater tots are golden. Allow dish to rest for at least 5 minutes before serving.
