Tequila Lime Chicken

This traditional Mexican spirit is the beverage of choice for Cinco de Mayo festivities, and whether you’re planning on sipping it straight or mixing it up, we’ve got great tequilas to suit every budget. Jose Cuervo Gold Tequila is the not-so-secret ingredient in this delicious marinade, and along with a Serrano pepper, it lends this chicken a real kick of Cinco de Mayo flavor! Use your favorite chicken cuts, or trade chicken for beef, pork, or seafood.

- 1 1/2 lb. Bone-In/Skin-on Chicken Thighs or Drumsticks
- 1 c. Jose Cuervo Gold Tequila
- 2 tbsp. Vegetable Oil
- 4 Fresh Limes, juiced & zested
- 1/2 c. Fresh Cilantro, finely chopped
- 4 Garlic Cloves, grated
- 1 White Onion, slivered
- 1 Serrano Pepper, seeds/ribs removed (if desired) & finely chopped
- 1 tsp. Ground Cumin
- 2 tsp. Chili Powder
- 1 tbsp. Salt
- 1 tsp. Black Pepper
Combine all ingredients except chicken in a large, non-reactive bowl. Submerge the chicken thighs or drumsticks in marinade and cover tightly, or place chicken pieces in a resealable plastic bag and pour marinade overtop, then squeeze out air and seal tightly.
Refrigerate and marinade for at least 2 hours or up to 24 hours. When ready to cook, prepare chicken using your favorite cooking method! Use this marinade for extra-flavorful poultry, steak, pork, or fish.
