Summer Plum Cobbler

This recipe is simple yet the perfect dessert for a warm summer evening, serve it with your favorite vanilla ice cream or whipped cream for a real treat!

Ingredients

  • 3/4 cup plus 2 tablespoons white sugar
  • 10 fresh plums, seeded & sliced
  • 2 tablespoons cornstarch
  • 1/4 teaspoon ground cinnamon
  • 1 cup all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1/4 cup butter
  • 1/4 cup milk
  • 1 egg, lightly beaten
  • whipped cream, for serving

Instructions

  1. Preheat oven to 350 degrees F. In a large bowl, combine 3/4 cup sugar, plums, cornstarch, and cinnamon. Place the fruit mixture in a 2-quart casserole dish or ceramic pie dish.

  2. In a medium bowl, combine the remaining 2 tablespoons of sugar, flour, baking powder and salt. Cut the butter in with a fork or pastry blender until the mixture resembles coarse crumbs. Stir in the milk and egg until just moistened. Drop batter on fruit in evenly spaced dollops. Bake for 35 minutes.

  3. Serve hot with whipped cream.
