Shortbread Cookies with Royal Icing

Rich and buttery, these cookies are a holiday classic for a reason!

Ingredients

  • 2 c. All Purpose Flour
  • 1/2 tsp. Salt
  • 1/2 c. + 2 tbsp. Powdered Sugar
  • 1 tsp. Vanilla Extract
  • 1 c. Unsalted Butter
  • 1 tsp. Water
  • Icing
  • 3 oz. Pasteurized Egg Whites
  • 1 tsp. Vanilla Extract
  • 4 c. Powdered Sugar

Instructions

  1. In a food processor, combine flour, sugar, and salt; add butter, vanilla, and water, and combine until a dough begins to form. Form dough into a log and chill for at least one hour or overnight.

  2. Preheat oven to 375 degrees. Slice log into 1/3-inch thick disks and transfer to a baking sheet. Bake for 12-14 minutes, rotating pans halfway through. Allow five minutes to cool on tray before transferring to cooling rack.

  3. For the Icing: Beat egg whites and vanilla together until frothy, slowly add powdered sugar and beat until mixture forms stiff, glossy peaks. Transfer to piping bag to decorate cookies.
