Roasted Kohlrabi

Never heard of kohlrabi before? Well, get ready to meet your new favorite vegetable! These funky relatives of the cabbage come to us from Suncatcher Farms, and they’re great for eating raw or cooking into something! We’ve dressed them super simply for an easy, healthy side dish that completes any meal.

Ingredients

  • 1 lb. Locally Grown Purple Kohlrabi, peeled & cubed
  • 3 tbsp. Olive Oil
  • 1/4 Fresh Parsley
  • 2 tbsp. Garlic Powder
  • 1 tsp. Hot Paprika
  • 1 tsp. Salt
  • 2 tsp. Freshly Ground Black Pepper

Instructions

  1. Preheat oven to 375 degrees. Toss together cubed kohlrabi, garlic, paprika, salt, pepper, and olive oil until evenly coated in spices and oil. Arrange seasoned kohlrabi on a large baking sheet in a single layer.

  2. Bake for 30 to 35 minutes or until kohlrabi are fork-tender; toss with parsley to finish. Serve as a healthy side dish with roasted meats, or toss with seasonal veggies and greens for a flavorful, vegan dinner.
