- 1 lb. Locally Grown Purple Kohlrabi, peeled & cubed
- 3 tbsp. Olive Oil
- 1/4 Fresh Parsley
- 2 tbsp. Garlic Powder
- 1 tsp. Hot Paprika
- 1 tsp. Salt
- 2 tsp. Freshly Ground Black Pepper
Preheat oven to 375 degrees. Toss together cubed kohlrabi, garlic, paprika, salt, pepper, and olive oil until evenly coated in spices and oil. Arrange seasoned kohlrabi on a large baking sheet in a single layer.
Bake for 30 to 35 minutes or until kohlrabi are fork-tender; toss with parsley to finish. Serve as a healthy side dish with roasted meats, or toss with seasonal veggies and greens for a flavorful, vegan dinner.
