Roasted Brussels Sprouts with Corned Beef

Brussels Sprouts with Corned Beef is a twist on a classic Irish dish: Corned Beef and Cabbage. Serve it at your St. Patrick’s Day celebration dinner, or make later that week with your leftover corned beef!

Ingredients

  • 1/4 cup olive oil
  • 1 1/4 pounds halved Brussels sprouts
  • 2 ounces cooked Oliver’s Choice 100% Angus House Brined Corned Beef Brisket, chopped
  • 2 chopped green onions
  • 1 teaspoon crushed coriander seeds

Instructions

  1. Heat 1/4 cup olive oil in a large nonstick skillet over high heat. Add Brussels sprouts; season with salt and pepper. Cook, stirring once, until browned and tender, 7 to 8 minutes. Add chopped corned beef, crushed coriander seeds and chopped scallions; cook, stirring, until warmed through, 1 minute. Serve hot immediately.
