Quick Weeknight Minestrone Soup
Ingredients
- 1 Tbsp. Olive oil
- 1 Onion, diced
- 1 Carrot, sliced
- 1 Celery stalk, sliced
- 2 Garlic cloves, minced
- 1 (15 oz) Can diced tomatoes
- 4 C. Broth (vegetable or chicken)
- 1 (15 oz) Can mixed beans or white beans, drained
- 1 C. Small pasta (any short shape)
- 1 tsp. Italian seasoning
- Salt and pepper to taste
- Optional: 1 cup frozen peas or green beans
Instructions
Heat olive oil in a large pot. Add onion, carrot, celery; cook 5 minutes.
Add garlic and cook another 30 seconds.
Stir in tomatoes, broth, beans, Italian seasoning, salt, and pepper. Bring to a boil.
Add pasta and cook 10–12 minutes until tender. If using peas or green beans, stir them in during the last 5 minutes.
Serve immediately — quick, hearty, and full of flavor!
