Quick Weeknight Minestrone Soup

Ingredients

  • 1 Tbsp. Olive oil
  • 1 Onion, diced
  • 1 Carrot, sliced
  • 1 Celery stalk, sliced
  • 2 Garlic cloves, minced
  • 1 (15 oz) Can diced tomatoes
  • 4 C. Broth (vegetable or chicken)
  • 1 (15 oz) Can mixed beans or white beans, drained
  • 1 C. Small pasta (any short shape)
  • 1 tsp. Italian seasoning
  • Salt and pepper to taste
  • Optional: 1 cup frozen peas or green beans

Instructions

  1. Heat olive oil in a large pot. Add onion, carrot, celery; cook 5 minutes.

  2. Add garlic and cook another 30 seconds.

  3. Stir in tomatoes, broth, beans, Italian seasoning, salt, and pepper. Bring to a boil.

  4. Add pasta and cook 10–12 minutes until tender. If using peas or green beans, stir them in during the last 5 minutes.

  5. Serve immediately — quick, hearty, and full of flavor!
