Pulled Maitake Mushroom Sliders

We love organic, locally grown gourmet mushrooms from our friends at Mycopia, and this week, share the mushroom love with epic deals on our favorite Mycopia mushrooms! With some you may recognize and some you may not, this incredible range of gourmet mushrooms are all completely delectable and super nutritious, and all of Mycopia’s mushrooms are grown locally at their facility in Sebastopol. With plenty of varieties to choose from, you’ll be sure to find your mushroom match! Try using them as a meat substitute like in these Pulled Mushroom Sliders! Made with nutrient-dense Maitakes, you won’t even miss this meat in this ultra-savory vegetarian take on a barbecue classic.

 

  • Serves: 12 sliders
  • Cook Time: 40 minutes

Ingredients

  • 1-1.5 lbs Maitake Mushrooms
  • 12 ct. King's Hawaiian Rolls
  • Short Mama's BBQ Sauce
  • 1 bag Fresh Express Coleslaw Mix
  • Butter, softened

Instructions

  1. Saute mushrooms in a large pan with 1-2 tbsp. butter until tender, about 15-20 minutes. Mix in desired amount of Short Mama's BBQ Sauce and simmer for 20 minutes.

  2. Slice rolls in half, spread with butter and toast butter side up in a preheated oven at 350F for 10 minutes. Meanwhile, prepare coleslaw according to package directions.

  3. Add mushroom mix to rolls and top with coleslaw. Enjoy!
