New Year’s Good Luck Greens with Ham & Bacon

According to tradition, New Year’s Day supper will bring you fortune in the year to come.  Collard Greens are considered a lucky food, they are said to represent green “folding money,” and by eating it, you open yourself up to prosperity in the new year!

  • Cook Time: 2 hour 20 minutes

Ingredients

  • 12 hickory smoked bacon slices, chopped
  • ½ pound smoked ham, chopped
  • 2 medium sweet onions, chopped
  • 6 garlic cloves, minced
  • 1 pound collard greens
  • ½ cup apple cider vinegar
  • 1 tablespoon sugar
  • ½ teaspoon black pepper
  • 1 teaspoon sea salt
  • 4 cups chicken broth

Instructions

  1. Cook bacon over medium heat in a 10-qt. stockpot for 10 to 12 minutes or until almost crisp. Add onion to stockpot, and sauté 8 minutes. Add garlic and ham, and sauté 1 minute. Stir in broth, collard greens, apple cider vinegar, sugar, salt, and pepper. Cook 2 hours or until desired degree of tenderness.
