Mixed Berries & Chocolate Quinoa Porridge

A good diet is an essential part of reaching any wellness goal, which is why we love this quinoa porridge for a healthy breakfast. We’ve used raspberries and blueberries here, but this porridge also goes great with bananas or even figs, and you can always add a dollop of your favorite nut butter for extra protein!

  • Prep Time: 5 minutes
  • Cook Time: 20 minutes

Ingredients

  • 1 c. White Quinoa
  • 2 c. Milk, or Dairy-Free Milk
  • 1/2 tsp. Salt
  • 1 tbsp. Maple Syrup
  • 3 tsp. Cocoa Powder
  • 1 c. Fresh Raspberries
  • 1 c. Fresh Blueberries
  • 1/2 tsp. Cinnamon
  • Raw or Roasted Pumpkin Seeds, for serving

Instructions

  1. Using a fine mesh sieve, rinse quinoa until water runs clear and set aside. Heat milk, or dairy-free milk in a medium saucepan until liquid just comes to simmer, stirring constantly. Stir in quinoa, salt, and 1/2 cup each raspberries and blueberries. Reduce heat to low, and cover loosely; allow porridge to cook for 10 minutes.

  2. After 10 minutes, stir in maple syrup, cocoa, and cinnamon. Cover loosely and continue cooking for another 10 minutes or until quinoa is soft and liquid is mostly absorbed. Serve topped with remaining fresh berries and pumpkin seeds.
