Microgreen Pesto
Ingredients
- 2 C. Microgreens
- 1 C. Basil
- 1 Clove of garlic, crushed
- 1/2 Lemon, squeezed
- 1/4 C. Roasted pine nuts
- 1/2 C. Olive oil
- Salt & pepper, to taste
- 1/3 C. Parmesan Cheese
Instructions
In a blender, add the microgreens, basil, garlic, lemon juice, Parmesan Cheese, and olive oil. Blend to a spreadable paste.
Adjust flavors – add salt, pepper, olive oil and more lemon juice to reach the consistency and taste you desire.
Enjoy immediately or store in an airtight, sterilized container in the fridge for up to 5 days.

Add a commentTo make this vegan simply omit the cheese. Pesto is delicious without it.
If you want, you can easily use fresh parsley instead of the basil. Experiment with cilantro and arugula and other dense greens.
Pumpkin seeds are great in pesto and highly nutritious. Walnuts are also great.
Pesto is a wonderful way to add vegetables to your diet. Use it instead of tomato sauce on pizza, mix it with quinoa instead of pasta or rice for the best nutrition. Microgreens and pesto – this sounds great!
