Local Little Gem Wedge Salad

Bring home fresh heads of Locally Grown, Organic Little Gem Lettuce from F.E.E.D. Sonoma to make this mighty mouthful of a salad! We’ve topped these tender, pint-sized heads of lettuce with delicious, funkadelic crumbles of Point Reyes Farmstead Creamery’s “Bay Blue” ($18.99/lb) and a healthy portion of bacon in this Sonoma County spin on a Wedge Salad. Enjoy it as a lunch or dinner salad, or halve the portion size for a delicious first course.

  • Cook Time: 15-20 minutes

Ingredients

  • 2 Locally Grown Organic Little Gem Lettuce Heads, thoroughly washed/dried
  • 1/3 c. Point Reyes Farmstead Creamery Bay Blue Cheese, crumbled
  • 4-6 strips Bacon, cooked & crumbled
  • 2 Eggs, hard-boiled/peeled & quartered
  • 1/2 c. Cherry Tomatoes, halved
  • 1/2 c. Cherry Tomatoes, halved
  • Your Favorite Ranch or Blue Cheese Dressing
  • Salt & Black Pepper

Instructions

  1. Trim the base of each Little Gem, being careful not to trim too much so the heads stay intact. Slice each head in half, then set on 2 plates.

  2. Season Little Gems lightly with salt and black pepper, then top with bacon, egg, cherry tomatoes, and dressing. Finish with fresh chives and Point Reyes Farmstead Bay Blue crumbles. Makes a fantastic first course or a tasty lunch!
