Loaded Baked Potato Cheese Ball

Get the new year started right with Oliver’s! Did somebody say cheese ball?! Yes, we did, but don’t worry – there’s nothing to hate here! Loaded with bacon, chives, and cheddar, this cheese ball is two party classics in one and the perfect way to ring in the new year!

  • Cook Time: 1 hour

Ingredients

  • 4 Russet Potatoes, peeled and cubed
  • 1 tbsp. Butter
  • 1 c. Cream Cheese, at room temp.
  • ½ c. Cheddar Cheese
  • ¼ c. Chives, finely chopped
  • 1 Garlic Clove, grated
  • 6 strips Bacon, cooked
  • Salt and Pepper

Instructions

  1. Boil potatoes until fork tender, then drain and mash with butter; allow to cool. While potatoes cool, put bacon into the bowl of a food processor and pulse until roughly crumbled; remove half and set aside, then continue to pulse remaining bacon until coarsely ground.

  2. Combine mashed potatoes, cheddar cheese, cream cheese, crumbled bacon, and chives in a large bowl and season to taste with salt and pepper. Mix until uniform, then shape mixture into a ball. Wrap in plastic wrap and chill for at least one hour. To serve, roll ball in ground bacon. Serve with thick-cut potato chips or crackers.
