Halibut en Papillote

Baked with herbs and brown butter in its own little package, it’s the perfect way to appreciate the true flavors of this excellent fish!

Ingredients

  • 2 (6 oz.) Alaskan Halibut Fillets
  • 1 Fresh Lemon, cut in thin slices
  • 4 Garlic Cloves, sliced
  • 8 sprigs Fresh Thyme
  • 4 sprigs Fresh Rosemary
  • 1/2 c. Butter, cut into chunks
  • Salt & Black Pepper

Instructions

  1. Preheat oven to 400 degrees. To make brown butter, heat a medium frying pan on medium heat. Add butter to pan and allow to melt; swirl melted butter continuously in pan until it begins to darken and brown, about 5 minutes. Remove pan from heat and allow brown butter to cool slightly.

  2. Cut parchment paper into two 13x15 inch pieces. Lay three slices of lemon on parchment followed by 2 sliced garlic cloves. Lay fish atop lemon and garlic slices, then 4 sprigs thyme and 2 sprigs rosemary on each. Spoon cooled brown butter over fish, then fold parchment to seal. Transfer parcels to a sheet pan, and bake for 10 to 12 minutes or until fish is firm and springs back easily to the touch.

  3. To serve, open parchment pouches and enjoy! Goes great with fresh veggies or roasted potatoes.
