Grilled Shrimp Skewers

These tasty crustaceans get done up in high style with a spicy, jalapeno-lime marinade and a little fresh char from the grill. Perfect for a game day lunch or a healthy dinner.

Ingredients

  • 1 lb. large Raw Prawns, peeled & deveined
  • 1/2 c. fresh Lime Juice
  • 1 fresh Jalapeno Pepper, chopped & seeded/ribs removed
  • 1/3 c. Cilantro, pack & roughly chopped
  • 1/2 tsp. Cumin
  • 1/4 c. Olive Oil
  • 1/2 tsp. Salt
  • 1/2 tsp. Black Pepper

Instructions

  1. In a blender, combine lime juice, olive oil, jalapeno, cilantro, cumin, salt, and black pepper; puree until cohesive but not smooth. Place raw shrimps in a large glass or Pyrex bowl, then pour in marinade, tossing so that shrimps are evenly coated with marinade. Cover tightly, then place in the refrigerator. Allow shrimps to marinate at least 15 minutes or up to 2 hours (any longer and the acid in the lime juice will begin to cook them).

  2. If using bamboo or wooden skewers, soak for 30 minutes in water before using. Clean and prep grill, then heat on medium-high. Arrange three or four shrimps on each skewer, then place on grill. Cook 2 to 3 minutes per side, flipping once, or until shrimps are fully opaque and pink. Serve immediately.
