- 1 c. Creamy or Crunchy Peanut Butter
- 1/2 c. Unsalted Butter, softened
- 1 c. Brown Sugar, packed
- 2 Large Eggs
- 1/2 c. Sugar
- 1 tsp. Vanilla Extract
- 1 c. Gluten-Free All-Purpose Flour
- 1 tsp. Xanthan Gum
- 1/4 tsp. Salt
- 1/2 tsp. Baking Powder
- 1 c. Chocolate Chips
Preheat the oven to 350 degrees. Line a 9x9 baking pan with parchment paper, leaving excess on each side to allow for easy removal.
In a mixer, beat together peanut butter, softened butter, brown sugar, sugar, eggs, and vanilla extract until thoroughly combined. In a large mixing bowl, sift together gluten-free flour, xanthan gum, baking powder, and salt. Gradually add dry ingredients to wet until completely combined. Stir in chocolate chips.
Bake blondies for 20 to 25 minutes or until a toothpick inserted in the center comes out clean. Cool on a wire rack before cutting.
