Refrigerate brie until chilled and firm (or freeze 30 minutes). Place brie on a serving platter. Using a sharp paring knife or cookie cutter, cut a football shape out of the center of the brie wheel and remove to serving platter. Fill football-shaped hole with apricot pepper jelly. Serve with Rustic Bakery Flatbreads or bread slices.
