Baby Greens Caesar Salad with Rosie Organic Chicken Breast

  • 1 pound Rosie Organic Boneless Skinless Chicken Breasts, filleted
  • 1 cup Oliver’s Own Croutons
  • grated Parmesan Cheese
  • salt and black pepper
  • 1 tablespoon olive oil
  • 8 ounces Earthbound Farms Organic Power Greens
  • 1 garlic clove, grated
  • 1 teaspoon Dijon mustard
  • 1 teaspoon anchovy paste or 2 teaspoons fish sauce
  • 1/2 cup mayonnaise
  • 2/3 cup grated Parmesan cheese
  • sea salt and black pepper


  1. Whisk together all Caesar dressing ingredients in a small bowl, then season to taste with salt and black pepper. Cover tightly, and refrigerate until needed. Pat chicken breast fillets lightly with paper towels to remove excess moisture, then season liberally on all sides with salt and black pepper.

  2. Heat a large frying pan on medium-high until hot, then add oil. When oil is hot but not yet smoking, add breast fillets to pan in small batches. Cook until golden on one side (about 4 to 5 minutes) then flip and continue cooking until golden on both sides and cooked through. Remove and cool.

  3. Sliced cooled chicken against the grain, and add the greens to a plate. Top the greens with seared chicken, Oliver’s croutons, and grated cheese. Toss with desired amount of homemade dressing just before serving.
