At Oliver’s Market, we take great pride in our Deli and Bakery teams and their success in creating high quality, freshly prepared foods and baked goods that are truly in a class by themselves. Our award-winning chefs and bakers are professionally trained and encouraged to focus on local, fresh ingredients whenever possible for their creations.

This week, we are shining a light on four new dishes from our chefs celebrating the flavors of fall as well as highlighting the outstanding house-made baked goods created by our bakers.

Chef’s Fall Dishes

Each of our store chefs was challenged to create a delicious new dish focused on seasonal ingredients. These new dishes will be featured at all four Oliver’s locations this week, so be sure to check them out!

Butternut Squash Salad with Kale and Citrus Vinaigrette

Chef Pedro Cortez – Stony Point Executive Chef

This salad is comprised of Butternut Squash, Apples, Pecan, Kale, Feta Cheese, Pomegranate, and a delicious Citrus Vinaigrette

“I wanted to put together two amazing ingredients as the bulk of this salad: Butternut Squash and Kale. I added a lot of textures to this salad. Crisp crunch of apples, a salty bite of pecan and feta cheese, pulled   together with the fun pop and color of the pomegranate. Topped off with a fresh Citrus Vinaigrette. The taste and colors of the salad really speak to the Fall season.”

Butternut Squash Turnover

Chef Mary Durham – Cotati Executive Chef

A mélange of Butternut Squash, Caramelized Onion, Goat Cheese, Chives, Nutmeg, Salt and White Pepper encased in a flaky crust.

The Butternut Squash Turnover appealed to me as an appetizer for the upcoming fall season.  The simple flavor profile of the butternut, caramelized onions and goat cheese encased in puff pastry feels like a wonderful and comforting snack or side dish.”

Roasted Beet & Sweet Potato Stack

Liz Guerra – Windsor Executive Chef

Stacks of Red Beet and Sweet Potato are alternated with a flavorful, savory herbed whipped Feta cream filling.

“My Fall item is a Sweet Potato and Roasted Beet Stack with Whipped Feta Cheese available in our Chef’s case here at Windsor! I love this dish because it blends hearty fall root veggies with warm spice, a light and creamy filling with a surprise from the caramelized shallot and fennel.”

Poached Pear Galette

Stephen Murphy – Montecito Executive Chef

This flavorful galette features poached pears and a creamy herbed ricotta and 12-month Manchego cheese filling, topped with a flavorful spiced red wine reduction.

“When I think of fall, it’s cooler temperatures and warm spices that come to mind. With our poached pear galette featured in our Chef’s Deli Case, we take juicy D’anjou pears and poach them in red wine with cardamom, star anise, cinnamon, and citrus. Paired with creamy herbed ricotta and 12-month Manchego Cheese, chopped candied walnuts and spiced red wine reduction, these autumn flavors are bundled in a flaky puff pastry that will have you falling in love with this galette.”

Tucked down a hallway behind the Tavern in our Windsor store lies a hidden wonderland of sweet, buttery deliciousness. The award-winning Oliver’s Production Bakery provides a mouth-watering array of items made from scratch that we ship to our store locations for in-house baking and decorating. We proudly use the highest quality, locally sourced ingredients like Clover Sonoma butter and Rock Island Eggs to make your favorite treats.

The Oliver’s Production Bakery runs seven days a week to keep our stores supplied with the freshest house-made Cookies, Granola, Scones, Croissants, Muffins, Chocolate Decadence, Pies and Cheesecakes, but that’s not all! Add to the list Eclairs and Cream Puffs, Brownies, Corn Bread, Focaccia (Rosemary and Olive), Almond Macaroons, Coconut Macaroons, and Classic and Chocolate Shortbread, and you can imagine what kind of a non-stop schedule is kept here. (Fun fact: The Oliver’s Production Bakery bakes about 8,000 cookies per week!)
