Very Cherry Cocktail

It’s the cherry-on-top for Summer: Organic Cherries are back at Oliver’s! These sweet beauties are the perfect healthy snack or dessert all on their own, but there’s so much more cherry goodness to explore. This week, we’ve cherry-picked recipes to really show-off these sumptuous Summer stone fruit at their best, plus stop by for great deals everyday! This cocktail smacks of all things cherry, but the real star is the De Chansac Vin de Pays d’Oc Rosé. Sweetened with homemade cherry syrup (which is great on ice cream or waffles, by the way) and spiked with Kirsch, it’s definitely a cherry-lover’s dream!

Ingredients

  • 1 oz. Kirsch
  • 3 oz. De Chansac Vin de Pays d'Oc Rosé Wine
  • 1 oz. Cherry Syrup
  • Club Soda (to finish)
  • Fresh Cherries (for garnish)
  • Ice
  • Cherry Syrup - 1 lb. California Cherries, washed & pitted/stems removed
  • 1 c. Apple Juice
  • 2 tbsp. Sugar
  • 1/8 tsp. Salt

Instructions

  1. Combine cherries, apple juice, sugar, and salt in a saucepan over medium-high heat, and bring to a boil. Reduce to a simmer, and cook until cherries have softened completely and syrup has thickened slightly, about 30 minutes. Allow syrup to cool completely, then strain into a sterile, resealable jar using a fine mesh sieve.

  2. To make the cocktail, combine Kirsch, rosé, and syrup in a cocktail shaker over ice. Shake vigorously until outside of shaker is completely frosted, and strain into a chilled glass over ice. Top with club soda to finish, and garnish with fresh cherries, if desired.
